This weekend was pretty packed despite losing an hour of sleep! I had a friend in town who lives out of state, helped another friend with his photography project, and tried out a new recipe I would highly recommend.

If you're a vegetarian, you don't eat meat on Fridays during Lent, or you're just looking for a new recipe to try, make this copycat recipe of Chipotle's sofritas. I made it into a burrito bowl and oh my gosh it was so good! It's a little spicy so if you're not a fan of spice I would recommend cutting down on the adobo sauce. Sofritas are made with tofu, and if the fact that this recipe uses tofu makes you second guess making this, just try it! Tofu absorbs the sauce that it's cooked in amazingly well so it will taste super good, I promise! To make it a burrito bowl we added beans, rice, salsa, sour cream, lettuce, and cheese. Obviously you can add whatever you want to make it your own version of a burrito bowl!
