Opening Weekend for Comfort Food Filled Food Truck in Medford

Ever heard of a sloppy grilled cheese? Yeah, me either until I came across The Lunch Box MN Facebook page.

The opening weekend hours are Friday, April 16th from 4:00 - 7:00 pm and Saturday, April 17th from 9:00- 1:00 pm. This weekend the food truck will be parked at Anhorn's Gas and Tire in Medford.

Besides their brand new menu item, the sloppy grilled cheese, they make many other filling, comfort items. I've got my eye on the Taco Dog.

If the menu isn't enticing enough, check out this classic chili cheese dog. It's making my mouth water at 6:50 a.m!

On Friday, the Lunch Box will offer their full dinner menu, and on Saturday they will offer a breakfast (!) and lunch menu. I've never had breakfast at a food truck, but I am in LOVE with the idea.

The Lunch Box is a mother and daughter owned mobile food truck that serves throughout Southern Minnesota. The truck's first year in action was 2020. Previous stops included Mineral Springs Brewery in Owatonna, Park View Care Center in Buffalo and Pippi Lane Boutique in Waseca.
