It is Lima Bean Respect Day, as it is every April 20th. This is an "unofficial" holiday, and there isn't any definitive information on why the holiday came about. Lima beans are very high in fiber, potassium, and iron, so that could be why the day was created. Some have considered the lima bean as one of the healthiest foods in existence.

Lima beans are usually green, but they can be white, red, purple, brown, or black. Lima beans are also called butter beans. This was news to me, I had no idea. I like to add butter beans to my chili, so I guess I eat them quite often.

I went looking for recipes, other than putting them in my chili and saw quite a few here. I may have to try making one of these tonight.
